Iberia’s origins date back to 1838, when settlers arrived and began establishing homesteads along Rabbithead Creek. One of the earliest figures in its development was Wilson Lenox, who set up a trading post that quickly became a central hub for early settlers. The town's name, Iberia, appeared on Missouri maps as early as 1844, likely inspired by the Iberian Peninsula.

During the Civil War, Iberia became the site of a Union fort, commanded by Captain William Long. The fort played a crucial role in defending Union interests in central Missouri, though Captain Long was later killed at his farm southwest of town. This period left a lasting impact on the region, shaping Iberia’s identity in the post-war years.

 
Education and Growth
One of the town’s most defining institutions was Iberia Academy and Junior College, founded in 1890. Established to provide higher education opportunities in the region, the academy played a pivotal role in shaping generations of students until its closure in 1951. Even after the academy’s doors closed, Iberia remained a town that valued education and community involvement.
