The town's name, Iberia, appeared on Missouri maps as early as 1844, likely inspired by the Iberian Peninsula.

During the Civil War, Iberia became the site of a Union fort, commanded by Captain William Long. The fort played a crucial role in defending Union interests in central Missouri, though Captain Long was later killed at his farm southwest of town. This period left a lasting impact on the region, shaping Iberia’s identity in the post-war years.

One of the town’s most defining institutions was Iberia Academy and Junior College, founded in 1890.
